World Peace Cookies by Pierre Hermé and Dorie Greenspan
(Quite possibly the best cookie ever made)
I tend to downplay cookies in the culinary repertoire, except at the holidays. And as Christmas approaches, it is this cookie that reigns supreme in my imagination and in my kitchen. It is also particularly relevant when there is so much strike when people want to be seen, respected, understood and are willing to do whatever it takes to make wrongs right. This is my peace offering.

I like Fleur de Sel and Valrhona everything. If inflation is getting the better of your food budget, Trader Joe’s has an excellent Flor de Sal from Portugal and very good Belgian chocolate.
Let them cool. Eat them fresh.

1 1/4 cups (175 grams) all-purpose flour (see note)
1/3 cup (30 grams) unsweetened cocoa powder (see note)
1/2 teaspoon baking soda
1 stick plus 3 tablespoons (150 grams) unsalted butter, room temperature
2/3 cup (120 grams) packed light brown sugar
1/4 cup (50 grams) granulated sugar
1/2 teaspoon fleur del sel or 1/4 teaspoon fine sea salt
1 teaspoon pure vanilla extract
5 ounces (150 grams) bittersweet chocolate, chopped into chips (no pieces larger than 1/3 inch), or a generous 3/4 cup store-bought mini chocolate chips
